I just found some information on GoNintendo.com that I thought was worth sharing.
The Wii U will come packaged with 1 controller and the controller will not be sold separately. All he multiplayer games are designed around using one of the new controllers and Wii-Remotes and the like. Wii U will also not support GameCube controllers.
Will they eventually do more tablet controllers or even maybe just be able to use the Classic Controller for Wii U games? (actually that is a great idea) I guess we will have to wait and see!
